If your honey has done this don't worry, simply place it in the sun to warm up. The inside of a bee hive maintains a consistent temperature of almost 40c so when your honey leaves the hive and cools down its natural sugars fall out of solution. Placing it in the sun will warm it back up to the temperature of the hive and it will become liquid again. Honey crystallising is actually a good sign of purity - some store bought honey will not crystalise because of additives in the honey or because it was diluted with water.
